Well, you have come to the right place!
Polly is one of Melbourne’s first cocktail bars, opening on Brunswick Street in the heart of Fitzroy over 23 years ago. Her catchy name, now synonymous with Fitzroy, was named after the first owners; a hospitality savvy Italian family, by the name of ‘Pollifroni’. Thus, Polly Bar!
Polly is modelled after a 1920’s plush Parisian bar, with marble coffee tables, red comfy armchairs, and a couple of thrones… why not! Polly is first & foremost a cocktail bar. We typically have between 15 – 20 delicious house made Cocktails that you will find no where else in Melbourne. Our genius, & experienced bartenders create a whole new list every season to keep things fresh. Whilst, keeping our most popular cocktails throughout the years! Curly Wurly, Happily Ever After, & Lemon Meringue, are amongst these. Plus we do all the Classic Cocktails, with finesse.

We are a sit down, full table service bar, no Mr Yum’s QR ordering here! We offer classic service, with bartenders taking your order from your table. So all you need to do is lay back on a comfy couch, and decide what mouthwatering concoction you would like to drink. Easier said then done with so many delicious options.
The Spaces.
Polly consists on 3 distinct spaces.
The Main Bar, the red plush themed bar that we are famous for!
The Atrium, a semi-open area (closed roof, opened doors) where guests can enjoy drinks. This is also a smoking area where guests can enjoy a cigar! Yes, we sell cigars!
The Upstairs Private Function Room, a recent addition to Polly’s repertoire. With a slightly different theme to downstairs, including wood, & exposed brick.

An extra bonus Polly offers is Absinthe! Absinthe is such a delicious & underrated spirit. No, it does not make you hallucinate like in the movies, but is a delicious spirit packed full of flavour. They typically do come above 70% ABV, however, here it is served traditionally with iced water and sugar. We have the largest selection of Abinsthe in the area!

Simple! Our job is to show people an amazing experience. Consider us old fashioned, but we actually care about our guests. We want to ensure anyone who comes into the venue has an absolutely fantastic time! If you leave feeling good about yourself, and pampered, we have done our job!
