What’s involved in this cocktail class?
Upon arrival you will be greeted by one of our friendly bartenders, who will quickly provide all your thirsty guests a drink on arrival. What drink? This can be a glass of bubbles, wine, beer, or a spirit & mixer e.g. vodka soda, G & T, whisky and coke etc.
While sipping your arrival drink, & nibbling on some delicious antipasto, one of our experts will guide you through the cocktail techniques, recipes, & tips/tricks.
Everything you need to know to bring the flavours of cocktails to life and make the perfectly mixed drink. We provides the ingredients, and the know how, all you need to bring is the enthusiasm.
Needless to say, a great interactive hen’s night experience! But also great for a team bonding adventure, EOFY or Christmas Party fun activity, or just a unique fun change from a normal night out!
Have a large group over 14 and want to enhance the experience? Many groups previously have chosen to book out our Private Function Room, and hire entertainment such as a drag queen, or of course, a topless waiter/waitress. Please request when enquiring. Otherwise, we host in a reserved area of our main bar, away from other guests. This actual class is private, just for your guests only.

Our cocktail class is designed for date night, hens activity, or fun team bonding activity. So our emphasis is a relaxed environment where everyone has fun!
We understand everyone has different preferences, so if you have any classic cocktails you love let us know! We often host large groups, and on the day if a guest doesn’t like a particular cocktail, just let us know, we can quickly grab a few other bottles so they can make a cocktail they will enjoy.
We want you to have the best possible time, so not only do you have an amazing experience … but for selfish reasons also, so you can tell your friends and family!
What Cocktails are Included?
What’s your spirit of choice? Rum, Gin, Vodka? Either way we have you covered! Through guest feedback & utilising different cocktail making techniques, we have our perfect selection of 3 cocktails;
Gimlet
Delicious gin version of a daiquiri. With gin, lime juice, and sugar syrup.
Aussie Punch
Polly’s unique creation with vodka, pomegranate liqueur, and strawberry jam… yes jam!
Espresso Martini
Of course!
If you have preferences for the cocktails, or would like to choose others, please let our bookings co-ordinator know.
Mocktail (Non Alcoholic) Option
We all have friends who are lucky enough to be having a baby! We love, them, but hate them obviously!
So of course Polly has to cater for them!
We offer our Mocktail Classes, the exact same experience (but using non alcoholic spirits); nibblies & drink on arrival, then learn how to make, and drink 3 mocktails!
We have recently jumped on the trend of Non Alcoholic Spirits, which are included as part of the class.
Have a secret pregnancy, just let us know and we will try our best to ensure non of your friends catch on.
And yes, if you have an underage friend, they can participate also, as long as they have their parental guardian present.
Mocktail Classes are $80 per person.
At the completion of the cocktail making class groups are welcome to stay and continue drinking at Polly, as long as we have seats available, take some great photos in our unique thrones, or you may like to head out for dinner along iconic Brunswick Street.
